Day 13-14 Weekend (Apple Mango Spelt Muffin)

After sleeping around 3 hrs, I had to get up at 6 30 am to catch my train at 8am. I could sleep a little longer, if I am the type who doesn’t care for breakfast but I don’t leave home without having breakfast.

I was deadly tired and had to drink a cup of soy latte to wake me up.

This weekend, I was away home and it was my first time to leave home since I have started this vegan project. Definitely I was worried, I didn’t want to end up eating potatoes without sauce!

So I made some apple mango muffin for my train ride and  brought some bread spreads from friday with me.

Here is the recipe for Apple Mango Spelt muffinIngredients : 1 cup of spelt flour (Dinkelmehl in German), 1/4 cup of sugar, 1 cup soy milk, 4 TSP of vegetable oil, 1 tsp of cinammon, 1tsp of baking powder, 1 tsp of nutmeg, 1 diced apple & half of diced mango

1. Mix all dry ingredients

2. Add liquid ingredients (soy milk and oil)

3. Add in diced apple and mango

4. Bake around 20-25 mins

Muffin

It was not so sweet which I found better for breakfast. But if you want to have a sweeter one, you can have it with some marmelade.

On friday at my friend, someone baked a nicely decorated chocolate cake and I didn’t fall into the temptation of having a piece of the cake. But yeah, it looked pretty delicious! On saturday, there was puppy seed cake which I like a lot and well, I didn’t want to reject the offer. So I tried it and it was yummy, definitely! But next time, if I am invited to a birthday party or something, I will make some time to make a vegan cake so that I can share it with others and make them understand that vegan food is actually delicious!!!

It was a piece of cake and it’s not a reason to stop my vegan project, I believe.
