Day 17 Spinach Cauliflower Quiche

Quiche without egg? Quiche without pie crust?

I searched for some vegan quiche recipes and there are already many available on the internet. Usually they were without the bottom part, that is without pie crust.

I could make the pie crust with margarine or vegetable oil but I didn’t have that much time and had several potatoes that should be eaten soon.

So I made the bottom with shredded potato like this :

I added in 2tsp of olive oil, 1tsp of nutmeg and garlic powder to the potato and baked at 180 c at around 20 mins while I prepared other ingredients.

Next thing that I prepared was the spinach cauliflower mixture.
In a pan, I fried one diced shallot and one clove of garlic, also diced with a little bit of olive oil.
Then I added in cauliflower and frozen spinach(didn’t have fresh one any more) and added 2TSP of water instead of oil. I fried around 7-8 mins. You don’t need to cook it thoroughly, because you will bake it once again later.

I put thix mixture in the utensil for baking.

The last thing that I prepared was the liquid part of the quiche. Instead of egg and milk mixture, I used 300gr of firm tofu, 60ml of soy milk, 60ml of water, 1TSP of soy sauce, one handful of cashew nuts. Then you mix everything in a blender.

Spread the blended tofu mixture on top of the spinach mixture and bake for 25-30 mins.

Then, the result is this one :

I was not totally satisfied with the taste but it was something unique. If you are looking for the exactly same flavour of usual quiche, you’d better try a different recipe. (but I think it’s hard to find exactly same flavour and maybe it’s not that important in the end!)
