Today was a LONG day. I had a class at 10am for 2 hrs, I wrote a Portuguese test after lunch and then I had a seminar from 4 to 7pm. Since I talked with one of my professor after the class, I just came back home slightly after 8pm…!
For lunch, I had a vegan penne pasta at cafeteria as usual and although I had a banana as a snack, I was totally hungry when I came back home. (In my afternoon-evening class, there were magdalenas muffins but I didn’t eat it)
So again, time to prepare something easy and quick but delicious and nutritious!In the morning, I made some Hummus so I thought I would make a Hummus wrap using vegetables that I have at hand.
Ingredients for one portion
: 1 Flour tortilla (I used the one with flaxseed), Hummus, 5 slices of cucumber, 1 roasted red bell pepper, 1 or 2 big mushroom seasoned with balsamic vinegar, some green leaves or cabbage salad
1. Place all the ingredients in the center of the tortilla
2. Roll it carefully and serve!
