Mexican Breakfast – Huevos Divorciados (Divorced Eggs)

What a funny name for a breakfast dish. The name made me even more curious to try out this dish. The name comes from two different sauces – one green tomato sauce, the other red tomato sauce and each egg is served on top of the warm, slightly fried corn tortilla with the sauce. The trick is not to mix the two eggs but keep them separate as you can see on the picture below.

Together with two Adrianas, all three of us prepared Huevos Divorciados together. This is a simple but yummy & spicy dish.

Ingredients for one portion:

2 fried eggs, 2 tortillas, green tomato sauce (salsa de tomate) and red tomato sauce (salsa de jitomate)

Adriana already made both sauces, so it took us max. half an hour to prepare huevos divorciados for three.
Both sauces are cooked ones and the green sauce has green tomato, onion, garlic, cilantro and serrano chili and the red one has chile de arbol, onion, garlic and red tomato. I asked to Adriana to tell me when she make the sauces next time. I hope to write about her sauce recipes more in detail soon.
