During my recent trip to Quintana Roo state in Mexico, I tried this vegetarian dish called Papadzul, in plural Papadzules. This dish is common in Yucatan, Quintana Roo and Campeche states in Mexico. It is pretty similar to Enchiladas, the difference is that it is stuffed with hard-boiled eggs and the sauce has chile habanero, the chile commonly used in this area of Mexico.
I haven’t made it yet by myself but I found the recipe for this dish. It’s simple but tasty.

Recipe for 2 portions
Recipe for the sauce : 4 tomatoes, half onion, 1 chile habanero, dry or fresh epazote, salt to taste
-> Boil all the ingredients and mix them in a blender
Recipe for the filling: 4 eggs
