Day 6 Being sick and being vegan “Bye bye cold : Chard Cauliflower soup with Garlic”

Wednesday I got a slight cold. Some friends of mine teased me that it is because I stopped eating animal-based food and I should start eating “normal” again.

Well, it´s not so important if I got the cold because of my sudden (?!?) change on my diet or not – well, in reality, it was not so sudden, I was eating like this in last november for longer period.

But because I got sick, I could think more about why veganism makes a lot of emphasis on health.

When we are going for an option, which is not taken by the majority, we are tend to be more questioned…sometimes in pretty harsh ways. I think not eating animal-based food is pretty much same thing. If someone who has a “normal” diet got a cold, would someone even make joke that she/he got sick because of the bad diet?

Well…my conclusion is…always food for thought! ;)

Anyway, I hate being sick so to say goodbye to the cold, I made a chard cauliflower soup with a lot of garlic for lunch today, following an advice of a friend of mine who has 100% of faith that garlic helps to get rid of cold.

Ingredients for 1 & half portion (it’s always hard to make only one portion…)

Simple ingredients

: 5 big fresh chard leaves, 6 cloves of garlic, 50 gram of cauliflower, a little bit of leek, 1 tsp vegetable stock powder, half tsp cumin powder, half tsp nutmeg(nutmeg gives a special flavour, I think), pepper and salt to taste, some nuts for decoration.

As always, the recipe is super easy.

1. Boil water and when the water is boiling, put the garlic, leek and cauliflower first.

2. After 5 minutes, add the roughly chopped chard (from 4 leaves) and boil 3-4 minutes more.

3. Blend everything except a few small florets of cauliflower.

4. Boil again with finely chopped chard(from one leaf) and chopped cauliflower from No.3.

5. Add seasoning and decorate with a couple of cashnut or any nut that you have in hand.#

(I am already almost not any more sick!!! Power of vegetable, maybe?)
